il tarassaco (taraxacum officinale) è una pianta a fiore spontanea che cresce un po' dappertutto. in primavera la potete trovare nei parchi urbani, nei giardini di casa, ed in qualsiasi aiuola.di fatto si tratta di un erbaccia e la riconoscete dal tipico fiore giallo che svetta tra l'erba non tagliata. questa pianta è comunemente conosciuta con i più svariati nomi tra cui i più comuni sono piscialetto, dente di cane e cicoria selvatica.il tarassaco è una pianta commestibile e può essere mangiata cruda come insalata, bollita oppure saltata in padella con aglio e olio.qui sotto il docuvideo del tarassaco saltato in padella, con pane, olio extravergine di oliva, sale e un bel peperoncino rosso piccante (... direttamente dalla mia scorta di peperoncini che prendo in calabria nel mese di agosto e che congelo per poterli gustare freschi tutto l'anno ).raccogliete il tarassaco in posti di campagna ed evitate assolutamente i parchi, le aiuole di città ed il bordo strada. la parte più appagante della preparazione infatti è sicuramente quella della raccolta! fatevi una bella camminata in campagna e portate con voi un coltellino ed una busta per raccogliere le erbe ... aria, sole, natura e attività fisica.la preparazione che vi consiglio è quella illustrata nel video. lavate accuratamente le foglie in abbondante acqua fredda corrente. scolatele senza asciugarle e poi fatele appassire in padella con uno spicchio di aglio, un filo di olio extravergine di oliva ed una presa di sale.il tarassaco non deve cuocere (potrebbe infatti essere consumato anche crudo), ma deve solo appassire ed insaporirsi con l'olio e l'aglio.il suo sapore delicato, con un senso di amarognolo appena accennato, può essere abbinato come contorno sia a carne che a legumi (preferibilmente ceci o lenticchie)a me piace molto su una fetta di pane caldo con l'olio fresco ed il sale.bruschetta con tarassaco saltato in padella e peperoncino
